  • peasant butter (frozen) - 80 g;

This amount of ingredients will make a medium-sized dish.

  1. Drain the oil from the canned food, separate the fish from the bones and grind with a blender or a regular fork.
  2. Separate whites and yolks from boiled eggs, grate them separately on a fine grater.
  3. Grate cheese.
  4. Finely chop the dill.
  5. Chop the onion finely.
  6. We collect the dish: the first layer is fish, the second is onions, the third is cheese, then we make a mesh of mayonnaise and add proteins on top. Rub frozen butter on them and sprinkle the salad with yolks.

Decorate the sides of the salad with dill and put it in the refrigerator for several hours. Greens can be added between the layers, then leave the top decorated only with yolk.

Russian salad

Salad today is also prepared in different variations, for example, instead of sausage, they use meat or ham, instead of pickled cucumbers - capers, instead of mayonnaise they season it with sour cream or classic yogurt. But the traditional option is always relevant. Ingredients:

  • potatoes - 5 medium tubers;
  • carrots - 3 small tubers;
  • eggs - 4 pieces;
  • cucumber (salted) - 3 large;
  • sausage (doctor's or any other boiled) - 250 g;
  • canned peas - 1 can;
  • mayonnaise "Provencal" (or any other) - 200 g.

Boil potatoes, carrots and eggs. All products are diced, mixed with peas and mayonnaise. The salad can be prepared before serving, or you can leave it in the refrigerator for 2 hours.

Jelly

Cooking this already traditional Russian dish is as easy as shelling pears, especially if there is a multicooker with a special function. Jellied meat is prepared from rooster, turkey, pork or beef leg. Before this, the meat is thoroughly washed and kept in water for several hours, periodically draining and renewing the liquid. Then put on fire and cook for at least 3 hours. 30 minutes before cooking, salt to taste and add bay leaves, carrots and onions. After cooling, remove the bones, distribute the meat on plates, and add garlic to the broth to taste. Navar is filtered and poured into dishes. If there is too much liquid, there is no stickiness on the lips after the test, gelatin is added along with the garlic at the rate of 15 g per 500 ml of broth. Dissolve it according to the instructions on the package.

Sandwiches with caviar

This is a great snack for the New Year's table at all times. To prepare a dozen small sandwiches, you will need 30 g of butter, 20 g of red caviar and a white baguette. The bread can be cut in various shapes, greased with butter, and the caviar can be spread on top. The butter can be squeezed next to the caviar into special baskets or tartlets, which are used instead of bread for such sandwiches.

Chicken on a bottle

A chicken in a ruddy fur coat will be a good addition to baked potatoes or homemade noodles, and this hot dish will appeal to all guests at the New Year's table. The claim is built on years of experience in celebrating the New Year in large companies. So, to cook chicken on a bottle you will need:

  • chicken carcass - 1.5 kg;
  • any beer - 0.5 liters;
  • 2 tsp. paprika, coriander, cloves, nutmeg, turmeric, ginger and other spices at your discretion;
  • honey - 50 g;
  • 1 tbsp. tomato (paste) and mustard;
  • garlic - 4 cloves;
  • thyme, rosemary, or other aromatic herbs.

Preparation:

  1. The carcass is washed without removing the skin and left for several hours in a saline solution (3 tablespoons of salt are dissolved in 1.5 liters of water).
  2. Spices, tomato, mustard, honey, pressed garlic are mixed until smooth and spread over the whole chicken with the composition.
  3. Half a glass of beer is poured out of the bottle and the carcass is "seated" on it.
  4. The bottle is placed on a baking sheet, into which a little water is poured and aromatic herbs are scattered.
  5. Place the baking sheet in a cold oven, turn on the temperature of 200 degrees and cook for about one hour.

If the top fries faster, cover it with foil. The chicken is not removed from the bottle immediately, allowed to cool for 10 minutes and served.

Jellied fish

Well, who does not remember the famous expression of Lukashin "What disgusting is your jellied fish!" In fact, it is a delicious dish made from pike, pike perch, perch or other suitable fish. By the way, a budget option for aspic is to cook it from hake or pollock. The fish is boiled in a small amount of water (so that it slightly covers the pieces), salt, bay leaves are added, the soup is filtered after cooling and, together with the fish, is distributed into a large dish. If the fish is not from the "gelling" composition, then gelatin is added to the aspic.

Herring under a Fur Coat

For the dish, you will need salted herring, as well as mayonnaise, onions and boiled vegetables: red beets, carrots, potatoes, eggs. The first layer - finely chopped pieces of fish, put chopped onion on it and grate potatoes on a fine grater, smear abundantly with mayonnaise and then three carrots, eggs and beets. Grease the top with mayonnaise again and decorate as you wish. The easiest way to decorate is to rub the yolk on top. Ingredients

  • 650 g combined minced meat
  • 150 g white bread
  • 2 large onions
  • parsley
  • 1 carrot
  • 1 tbsp. l. sweet mustard
  • 2 egg whites
  • 1 tbsp. milk
  • 350 g champignons
  • 2 cloves of garlic
  • grated cheese
  • mayonnaise
  • red and black pepper, salt, sunflower oil - to taste.

Preparation

  1. Scroll 1 onion, carrot, parsley through a meat grinder, then mix with minced meat.
  2. Pour the loaf with milk, then squeeze and add to the minced meat. Put spices and mustard there.
  3. In a separate container, beat the egg whites until firm peaks. Add them to the minced meat and mix thoroughly.
  4. Chop mushrooms, onions and garlic. Heat sunflower oil in a frying pan, in which first fry the onion and garlic until golden brown. Then add the mushrooms and fry everything until the liquid has completely evaporated. Salt a few minutes until tender.
  5. Grease a baking sheet with sunflower oil.
  6. Make cutlets from minced meat, in which to form a small depression. It is necessary to put mushroom filling in it. Put some mayonnaise on top of the cutlets and sprinkle with cheese. Place the dish in the oven preheated to 200 ° C. Bake until tender.

Ham cakes

You will need:

  • 250 g thinly sliced ​​ham
  • 200 g of cheese of the same cut
  • 120 g butter
  • 30 g jelly
  • peaches, apricots or cherries from compote.

Grate pieces of ham with softened butter and lay on top of each other, alternating with slices of cheese. Press tightly with some weight and refrigerate for several hours. Then cut small squares, triangles or rectangles from the resulting striped plates. Cover them with jelly and garnish with compote fruit pieces. Put in the refrigerator again to freeze the jelly. This is a tribute to the memory of the pagan Slavs and the old calendar. In order for the dish to turn out to be truly tasty, the meat must be chosen correctly. Pork is prepared from the best quality pork pulp. For this, a ham, a back part are suitable, you can also take a pork neck.

In no case should pork be frozen; it is absolutely not suitable for making boiled pork! If you make it from thawed meat, the dish will turn out to be loose, with a heterogeneous consistency. Steamed meat is also undesirable. It is best to use fresh, lightly chilled pork.

Cooking homemade boiled pork includes several stages.
Consider a classic option: oven-baked meat. Not in a slow cooker, foil, sleeve, etc., but in a conventional gas or electric stove oven.

- 1.5 kg of good pork pulp
- 100-150 g lard
- 5 cloves of garlic
- spices for rubbing (to taste).

1. First wash the pork and remove the films.

2. Then the meat must be soaked so that it is saturated with moisture. Thanks to this, the boiled pork will be juicy. The dish may become dry without soaking.
Prepare brine for soaking. They put 50 g of salt in 1 liter of water, the amount of brine depends on the size of the piece of meat. Put the pork in there for at least 1.5 hours.

3. Remove the meat from the brine. Dry it and rub it well with any spices of your choice.

4. Sprinkle garlic on the meat. To do this, peel 5 cloves of garlic, cut each in half and shove them into the pulp, making narrow long cuts for this.

5. Cut the bacon into thin slices. Place half of the slices on a baking sheet or the bottom of the pan in which the boiled pork will be baked. Put the meat on top of them, and put the remaining slices of bacon on it. This is necessary so that in the process of baking the boiled pork does not burn and its surface does not dry out from the heat.

Then pour 1 cup of hot water onto a baking sheet or the bottom of the mold and place the meat in a well-preheated oven. The heat should not be too great so that the meat does not dry out. But it shouldn't be too small either. Usually, the dish is cooked for at least 2 hours (or a little more).
During the baking process, it is imperative to periodically water the meat with the released juice. Then the boiled pork will acquire an appetizing appearance and a beautiful ruddy surface.
After the meat is cooked, it must be completely cooled. Then it can be cut into straight pieces with a sharp knife.

Sweet pepper baskets stuffed with cheese and nuts

This beautiful vegetable appetizer has an original taste and will be appreciated by the participants of the New Year's feast.

- 6 large sweet peppers (red, orange or yellow)
- 1 cup shelled walnuts
- 1 glass of hot grated cheese
- 3 cloves of garlic
- 1.5 tbsp. tablespoons of mayonnaise
- salt pepper.

For this appetizer, you need bell peppers of the same shape, with a stable bottom. Rinse them. Cut off the top of each fruit and remove the grains to create neat "cups". You will still need the cut pieces.

Chop the garlic. Chop the tops of the peppers. Then combine the garlic, chopped peppers, walnuts, grated cheese and chop it with a blender. Add mayonnaise, salt, pepper, seasonings to taste into the resulting mass and mix.

Stuff the bell pepper "baskets" with this mass and smooth. The top of each "basket" can be sprinkled with grated cheese and garnished with mayonnaise
Serve on a platter or small platter.

Spicy champignons stuffed with cucumbers and cheese

- 30 mushrooms (preferably the same size)
- 2 eggs
- 1 glass of grated cheese
- 2 pickled cucumbers
- 2 cloves of garlic
- 2 tbsp. tablespoons of mayonnaise
- salt pepper.

Wash the mushrooms and cut off their legs so that only the caps remain.

Hard boil the eggs and chop finely. Cut the pickled cucumbers into cubes. Chop the garlic. Combine them and cheese and run through a blender. Then add mayonnaise, salt, pepper and stir.

Fill the mushroom caps with the resulting mass using a teaspoon.
Place the appetizer on a platter. Top of each "cup" can be decorated with mayonnaise or herbs.

Avocado boats

- 6 pcs. avocado
- 3 fresh cucumbers
- 2 tbsp. tablespoons of grated cheese
- 1 sweet and sour apple (like Granny Smith)
- 1 tbsp. a spoonful of lemon juice
- 3 cloves of garlic
- 2 tbsp. tablespoons of mayonnaise
- 1 tsp sugar
- 2 tbsp. chopped dill
- salt pepper.

Wash the avocado and cut it lengthwise. Gently spoon out the seeds and pulp without damaging the skin. You will have 12 boats.

Prepare the minced meat for the filling. Peel and chop cucumbers and apples. Sprinkle the apples with lemon juice to prevent browning. Slice the avocado pulp. Squeeze the garlic through a press.
Combine these ingredients and cheese and pass through a blender. Add mayonnaise, sugar, salt, pepper and stir. The mass should be spicy in taste.

Fill the avocado halves with it. Sprinkle with chopped dill on top.


Teiglah

Step 1. Grind eggs with icing sugar and butter, add flour and knead the dough.

Step 2. Roll the dough into sausages. Cut them into pieces and roll them into balls.

Step 3. Put the balls on a greased baking sheet and put in the oven at 180 C.

Step 4. Make a syrup: heat honey and sugar in a wide bowl, add cinnamon and bring to a boil.
